Smoky Blackberry Spiced Bourbon Smash

Muddled blackberries meet a cinnamon-honey syrup and good bourbon, then the whole glass gets cloaked in smoked rosemary right at the table. It pours deep garnet-black — exactly the witchy centerpiece a Halloween gathering wants — but drinks balanced and bright, not sweet. Batch the syrup ahead and it is a four-minute cocktail on the night.

Ingredients

two rocks glasses, generous 4 oz pours plus a smoked rosemary garnish

Instructions

  1. 1

    prep

Make the syrup: warm the honey with the hot water in a small saucepan over low heat, add the cinnamon stick and star anise, and steep off the heat for 15 minutes. Fish out the spices and cool.

Doneness cue: Syrup coats a spoon thinly and smells of cinnamon; it keeps 2 weeks refrigerated.

  2. 2

    prep

Muddle 3/4 cup of the blackberries in the bottom of a cocktail shaker until fully broken down — no whole berries left.

Doneness cue: Jammy, fully crushed fruit; you should see deep purple juice pooling.

  3. 3

    prep

Add the bourbon, lemon juice, and cinnamon-honey syrup to the shaker, fill two-thirds with ice, and shake hard for 15 seconds.

Doneness cue: The shaker frosts over and goes quiet — that is the ice giving way.

  4. 4

    finish

Double-strain (shaker strainer plus fine-mesh sieve) into two rocks glasses over large ice cubes, pressing the solids to get every drop.

Doneness cue: Clear, jewel-dark liquid — no seeds or pulp in the glass.

  5. 5

    finish

Smoke the drinks: light the tip of a rosemary sprig with a torch or long match until it crackles, blow it out so it smolders, and hold it over each glass for 10 seconds before resting it on the rim as garnish.

Doneness cue: A curl of white smoke settles across the surface and the room smells like a bonfire.

  6. 6

    serving

Top with a splash of club soda if using, express an orange peel over each glass, drop in the reserved blackberries, and serve immediately.

Doneness cue: Berries float at the surface; drink within 10 minutes before the ice dilutes it.
